Ukazi Soup is the traditional soup of the people of Abia and Imo states
Ukazi Soup, a traditional delicacy of the Igbos, is often cooked for special occasions like traditional marriages or burial ceremonies.
INGREDIENTS
To cook this soup, you need the following;
- Sliced Ukazi leaves
- Sliced Uziza leaves(hot leave)
- Egusi
- Achara
- Stock fish
- Dry fish
- Crayfish
- Meat
- Kpomo
- Palm oil
- Ofor (thickener)
- Pepper
- Seasoning cubes
- Salt
PREPARATION
STEP 1
In a clean pot, put the meat, stockfish, Kpomo and dry fish. Then add as much water as you desire but this should depend on the size of the soup. Add salt, seasoning cubes and spices. Let that boil for 15 to 20 minutes.

STEP 2
While that boils, pound the egusi with salt and onions in a motar to extract the oil. Then mould it in little balls. Put the moulded egusi balls into the boiling sauce. Then add red oil, ofor and achara. Let the soup boil and thicken for about five minutes.
STEP 3
Lastly, add the sliced Ukazi and Uziza leaves and allow the soup cook for three minutes and the soup is ready.
